The Chesil Smokery – hottest little Smokery in the west
Here in our traditional smokery at Bridport, west Dorset, we take the finest British produce and gently smoke it over oak and peat. To be honest, we’re utterly addicted to smoking delicious things.
We don’t just mouth the concept of doing the right thing – we practice what we preach.
We’ve all sworn an oath here at the Chesil Smokery. And, that oath is “to do the right thing”. What that actually means is we want to create delicious smoked fish, meat and poultry using traditional methods that do justice to the ingredients we’re brought by our suppliers. All our wonderful goodies are made from animals, fish and birds that have lived the right kind of life (as far as humanely and practically possible).
So, forgetting all the marketing twaddle for a minute, if you buy our goodies and you believe in doing the right thing then you’re one of us – good lifers who’ll always give you an honest opinion and try their hardest to make everything just right.
So here’s a list of what we will do and what we won’t :
We won’t sell smoked wild salmon – they’re better off in our rivers than being under pressure from commercial netsmen. And anyway, we’ve conducted taste-tests where people can’t tell the difference between our standard product and wild. In fact, ours scored better more often than not.
We won’t sell smoked products that we haven’t smoked ourselves, in our own kilns.
We won’t drop our standards in order to increase margins or lower prices. Luckily, our customers seem to find our range fairly priced – and we’re frequently no more expensive than supermarkets’ standard ranges.
What’s more, we are so proud of the taste and quality of our smoked goodies, that if you really don’t like what you try, we’ll give you your money back — no ifs, quibbles or buts. That’s called putting our money where your mouth is!
On the other hand :
We do source from the most sustainable and ethical sources. Local is ideal, where practical, but we’ll go further if that means better quality. We’ve found out, through experience, that when producing the best food, you can’t turn a sow’s ear into a silk purse. We only use the best ingredients – and we like to think it
We buy our fish through one of the industry’s leading experts. He understands that we will only take the very finest fish, and also that some sources are better at different times of the year.
We source our fish from farms which are situated in areas of strong currents and big tides – this means they swim far more, which produces a leaner and meaner texture – no ghastly oiliness with our fish.
These come from our own farm, where sparkling springs feed our 38 ponds full of brown and rainbow trout. We’ve been raising fish for re- stocking into the rivers of southern England for nearly 50 years. We’ve always produced less fish per pond than a table farm and feed them like the champions they are – so they’re not flabby or muddy tasting. Quite a few of our regulars prefer the smoked trout to salmon.
These come from the north sea for the finest quality and consistently large size. They arrive here full of oil and goodness. Our smoked mackerel are not the dried out husks that you’ll find hiding in your local hypermarket.
South-west herrings are currently too small for a hearty appetite, so we source ours from the North Sea. They’re large and juicy and recently featured on Channel 4 with Jimmy Doherty on Food Unwrapped
Duck and Chicken Breasts
These come from Devon and are all free range. They’re reared on a low density GM-free diet which is completely free of antibiotics or growth promoters.
We use rolled haunches of red deer, reared in a Hampshire deer park.
These prawns are utterly delicious. So delicately smoked for a sweet yet moist flavour. From the seas around Greenland.
Our bacon is locally sourced from the Dorset. The flavour is superb.
Again the silver side of beef we use is sourced locally from within Dorset. This Pastrami packs a punch but is more-ish.
All our packaging will ensure our product arrives with you cool and ready to devour. The boxes, ice packs and insulated bags are reusable and not only functional but finish off a present that you would be proud to give and thrilled to receive.
Our ethical smoke
We use oak and apple wood from British trees, specially graded to produce the optimum size of tiny wee chippings that suit our wonderful old smoker.
